Origin

The grapes for this Riesling come from various steep slopes of our estate characterized by blue-grey Devonian slate, fully living up to its name.

Winemaking

The grapes were harvested in October, gently crushed and briefly macerated on the aromatic and mineral-rich grape skins. The must was then slowly and cool-fermented with indigenous yeasts, allowing the wine’s layered, fruity aromas to fully develop. Gentle maturation in stainless steel tanks as well as partly in large wooden casks, with extended ageing on the fine lees, followed after fermentation.

Food Pairing

An ambitious everyday drinking wine, perfectly suited as an aperitif and table wine. Also an excellent match for light starters and salads, such as bruschetta, tapas, and avocado salad with cottage cheese.
