Vineyard
Deep, well-structured soil with a high proportion of finely fragmented slate and a good layer of fine earth. This provides the site with excellent water supply, which contributes to the wines’ expressive minerality.
Winemaking
Meticulous work in the vineyard and strict selection during harvest resulted in perfectly healthy, fully ripe grapes. Almost complete destemming is followed by a four- to six-week maceration and fermentation using natural yeasts. The grapes are then gently pressed using a basket press, and the young wine is aged in classic French barrique barrels for 18–24 months.
Food Pairing
This complex, great wine, with all its finesse and elegance, offers a well-balanced accompaniment to a juicy entrecôte with robust truffle jus, green beans and parsley potatoes, or glazed duck breast with shallot jus. When matured, it is also excellent with braised meat dishes. Best decanted and enjoyed from a large glass.
